- Análise comparativa do USALI, USAR e USFRSPublication . O objetivo geral é estabelecer a comparação entre o USALI (Uniform System of Accounts for the Lodging Industry), o USAR (Uniform System of Accounts for the Restaurants) e o USFRS (Uniform System of Financial Reporting for Spas), de forma a proporcionar uma base de análise para os gestores, no sentido da obtenção de vantagens competitivas.

Technology and innovation could provide a strong contribution to the development of tourism by integrating knowledge about tourism products, services and experiences and the new needs and behaviours of consumers. This study analysed the scientific productions on technological innovation in the tourism sector using literature review and bibliometric analysis techniques, with data collected from the main databases of international relevance, Web of Science and Scopus. This study presents the mapping and cluster structures for the trends and dynamics of the investigations on the discovered research themes using the VOSviewer software. The results indicate that research related to innovation and technology in tourism has evolved in recent years, as well as highlighting the main areas of activity and presenting contributions to possible future lines of research.
- Ascertaining Restaurant Financial Sustainability by Analyzing Menu PerformancePublication . Gomes, Conceição; Malheiros, Cátia; Lima Santos, Luís; Campos, Filipa Alexandra Gomes deThe complexity of companies in the restaurant industry is clear, and various techniques can be used to make decisions. The analysis of performance and the optimization of restaurant menus are considered important, which is why several approaches can be used. The objective of this study is to achieve financial sustainability in the restaurant industry through menu performance analysis and identifying strategies to improve menu profitability. A qualitative methodology of a dual case study was adopted by comparing a restaurant within a hotel and a street restaurant. The results show that for restaurant owners and managers, these approaches are useful, simple, and pertinent for measuring the performance of the restaurant menu and consequently improving results. The originality of this research lies in the fact that three analysis models were applied simultaneously, allowing for an in-depth analysis of the profitability of the menus being analyzed. This study identified the most profitable items for each restaurant and the items that needed to be changed to contribute more to the profitability of the restaurant’s menu, resulting in practical implications. Through theoretical implications, this study corrects the limited knowledge about performance through the restaurant menu, creating a starting point for knowledge spreading to society. In conclusion, this research is one of the first to bridge the gap between theory and practice, taking several approaches to assess restaurant menu performances, which can be useful in restaurants to promote sustainability.
- Avaliação das empresas hoteleiras em função do VALPublication . Carrera, Carla; Gomes, Conceição; Santos, Luís LimaThe scope of the paper is the study a set of hotel companies placed in Lisbon, Portugal, which are grouped into "hotels with restaurant" and "hotels without restaurant". Taking into account the services available, the main objective is to compare the companies’ value, using the net present value (NPV) criteria, which is one of the main criteria used to analyse the feasibility of investments and to determine the companies’ value. In specific terms, it is intended to ascertain whether the existence of a restaurant in the hotel allows its value to increase; which services increase the companies’ value; and whether the official star rating influences the hotel's value. The research methodology is descriptive because it is intended to study the characteristics of a group of companies. Multiple case studies are used to make a convincing research and to allow comparability. Companies’ financial data was collected from the SABI Bureau van Dijk’s database. The results show that the group of hotel companies studied are economically feasible. On the other hand, hotel companies with a restaurant have a higher NPV compared to hotel companies without a restaurant.
- Bibliometric Analysis of the Scientific Production in Cultural Tourism from 2010 to 2019 in EuropePublication . Caicedo Barreth, Alba; Santos Pavón, Enrique; Lima Santos, LuísThis paper provides a general review of cultural tourism as a research subject in the last decade in Europe. First, it defines the terminology and its dimensions. This is followed by the analysis of the scientific papers published in international journals between 2010 and 2019, available in the Web of Science (WoS) and Scopus databases, to ensure the inclusion of high-impact studies according to the bibliometric quality index. Through the quantitative analysis of 625 WoS articles and 765 Scopus articles using bibliographic coupling, co-citation and co-occurrence analysis, this publication provides a significant overview of the terms involved or related to cultural tourism and the proposed clustering for each term. This paper concludes with a discussion of the main trends identified, their characteristics and possible changes over time
- A bibliometric model to analyze country research performance: SciVal topic prominence approach in tourism, leisure and hospitalityPublication . Cardoso, Lucília; Silva, Rui; Almeida, Giovana Goretti Feijó de; Santos, Luís LimaThis paper aimed to evaluate the Portuguese scientific production within Tourism, Leisure and Hospitality Management (TLHM). To this end, 572 papers from 51 peer-reviewed Scopus journals were mapped through a mixed bibliometric analysis method. The results indicated that Portugal has a significant TLHM research production, with an outstanding performance in terms of topic prominence percentile. Additionally, Portuguese TLHM research collaboration has increased significantly in recent years. It should be pointed out, however, that this production is significantly skewed towards tourism-specific studies rather than hospitality. This study presents a new bibliometric contribution by bringing the SciVal topic prominence and prominence percentile to the TLHM field and presenting a new country research performance model, indicating a new way to evaluate a country’s research performance. Additionally, this investigation featuring the overall structure of Portuguese TLHM research provides clear outlines to concerned bodies regarding researcher and institution performance and gives helpful and timely information to researchers, scholars, government managers, industry managers, and tourism and hospitality consultants.

- Circular Economy and the Tourism IndustryPublication . Costa, Berta José Fernandes; Rodrigues, Susana Cristina Serrano Fernandes; Pacheco, Pilar MorenoThe tourism industry has been growing at a remarkable rate and emerging as one of the major social and economic industries, and consequently one that boosts economic development that mostly supports countries’ gross domestic product (GDP). At the same time, it stands out as an industry which activities generate a considerable negative impact on the environment as it is configured according to the linear model of production and consumption, in which products are disposed of after usage, causing massive waste. From this standpoint, circular economy (CE) materializes as a new strategy, as it balances economic progress with the sustainable use of natural resources. In this regard, the purpose of this research document is to outline the conceptual dimension of CE and its principles, and propose a conceptual model which may allow the tourism sector to transform itself into a more sustainable industry and one which may succeed in generating multidisciplinary benefits and in parallel mitigate environmental, social and economic constrains. For this purpose, a literature review was carried out, as a means to highlight the tourism industry as one of the sectors which may contribute significantly and positively to the implementation of the long expected circular economy, where stock value is maintained in economy for the longest period of time.
- Competitiveness of Guayaquil towards bleisure tourismPublication . Caicedo-Barreth, Alba; Santos Pavón, Enrique; Santos, Luís LimaGuayaquil is proposed as a tourist and business destination, aiming to stand out as a digital city, with a suitable airport, a convention centre and highlevel accommodation capacity. The city receives many domestic and international tourists, although not always as the main destination of their visit. One of the tourist markets offered by the city is that of business, due to the important economic activity that takes place here, being the venue of congresses and international events. This has allowed the city to gain significant value in the business tourism sector, providing constant and profitable growth. However, the lack of study of the international market, specifically the millennial business sector, is affecting Guayaquil’s competitiveness compared to other destinations that have already recognized the differentiated profile of visitors from this age group, and that consequently offer a fusion of business and leisure tourism. This research was carried out during the second semester of 2018, evaluating the market of the new bleisure trend in Guayaquil. The results evidence the limited supply directed to this market segment, the lack of exploitation of business tourism and the continued lack of capacity of the tourism sector to satisfy the bleisure market. The conclusions focus on how tourism competitiveness can be achieved in business cities that also encompass places or activities where visitors can have a relaxing time.
