  • Instrumentos de educação alimentar e nutricional para crianças em idade pré-escolar: necessidades e desafios atuais

    Introduction: In Portugal there have been nutrition education programs aimed at children, using different instruments and methodologies. It is currently agreed that eating habits in early childhood have a strong impact on future health, being a window of opportunity for the modulation of eating habits for adult life. Nutrition education aimed at pre-school children is a very complex subject as it involves the child's development, pedagogy, and behavioral change. Objectives: To understand the development of pre-school children and describe the nutrition education instruments most used in this age as well as their possible impact on knowledge and food behaviour. Methodology: Narrative review of the literature using database search in Pubmed, ISI Web of Knowledge and the Online Knowledge Library. Results: Pre-school children need nutrition education tools that are appropriate to their cognitive abilities and that stimulate their interest. The most used nutrition education tools are food guides, children's stories, or games. Conclusions: Nutrition education instruments to be used at pre-school age should be tools for the realization of playful and meaningful moments of learning. Stories, traditional games, or digital games are thus valid instruments for this purpose and should be explored by educators to approach the topic of food.
  • Veggies4myHeart – educational project to promote vegetable knowledge and consumption in preschoolers

    Vegetable consumption among children is below recommended. Given the critical role of vegetable consumption in health promotion, it is essential to identify effective strategies to promote this intake. The Veggies4myHeart project aims to increase vegetable knowledge and consumption in preschool children through nutrition education strategies (NES). Veggies4myHeart is a prospective longitudinal study with children aged 2 to 6 years who attend preschools in the Leiria district. A questionnaire was applied to the parents to characterize the sample. NES were used: children’s story, digital game, vegetable-themed sticker booklet and the food wheel. The intervention consisted of 5 food education sessions, each focusing on one selected vegetable (lettuce, carrot, red cabbage, cucumber, and tomato). Sessions to assess knowledge and consumption of vegetables were held pre-and post-intervention. Knowledge was evaluated through a taxonomic categorization questionnaire. Consumption was assessed by recording the number of portions of each vegetable consumed. Wilcoxon test was used to compare pre-and post-intervention vegetable knowledge and consumption. ANOVA test was used to compare NES. Between 2018 and 2024, 649 children (52,5% female, mean age 4,36 ± 0,942) from 17 preschools participated. After the intervention, there was a statistically significant increase in vegetable knowledge (p < 0,001) and a statistically significant increase in the consumption of vegetables (p < 0,001). There are statistically significant differences between NES, with the digital game having greater vegetable knowledge (p < 0,001) and consumption (p < 0,001) than the others. The Veggies4myHeart project effectively increased vegetable knowledge and consumption in preschoolers. It is essential to continue the intervention to promote consumption and familiarity with vegetables, as well as the involvement of parents and preschool teachers, due to their prominent role as models for acquiring healthy eating habits.

    Nesta unidade curricular os estudantes aplicarão conhecimentos e competências adquiridos noutras unidades curriculares nomeadamente Dietética e Nutrição, Ciência dos Alimentos, Higiene e Segurança dos Alimentos, Dietoterapia e Análise e Planeamento de Dietas I. Pretende-se que de forma global conheçam várias técnicas culinárias e compreendam a relação entre o planeamento das refeições e as necessidades energéticas e nutricionais do indivíduo. Para o efeito, os estudantes deverão aplicar várias técnicas culinárias tradicionais e outras técnicas inovadoras, assim como caracterizar as alterações sofridas pelos alimentos durante a preparação e confeção, avaliar as características organoléticas dos alimentos e elaborar dietas nutricionalmente equilibradas de acordo com a faixa etária e a situação clínica apresentada.
  • Nutrition Education Intervention to Promote Nutrition Knowledge in Preschool Children at District of Leiria, Portugal

    Several factors can influence children’s food choices and preferences. Food and nutrition education at school can therefore be the key to improving children’s nutrition knowledge, and consequently their eating behavior. To this end, several strategies seem effective, and the current difficulty lies in choosing the best methodology to implement. To determine which intervention has the greatest impact on preschool children’s nutrition knowledge about vegetables: serious game, children’s story, children’s story associated with stickers, or food wheel. This experimental study had the participation of 162 children, aged between 3 to 6 years, attending four public school institutions in the district of Leiria, Portugal. To increase children’s nutrition knowledge about vegetables, four interventions were carried out: digital game, children’s story, children’s story associated with stickers, and a food wheel. To assess the recognition of foods, identification of vegetables, and the functions of five vegetables (lettuce, tomato, carrot, cucumber, and red cabbage), two instruments were applied at three different times (at the start, conclusion, and 6 months after the intervention). The collected data were analyzed using IBM SPSS software. There was an increase in nutrition knowledge both post-intervention and 6 months followup, compared to the initial moment. This increase was statistically significant (p <0.001) when evaluated overall. The intervention with the digital game “Veggies 4 my heart”, compared to the children’s story associated with stickers, proved to be more effective in increasing nutrition knowledge related to the vegetable's functions, 6 months after the intervention (p = 0.028). The four interventions were effective to promote nutrition knowledge about vegetables in preschool children. The interventions with the digital game or with the child’s story with stickers seem to be the most appropriate to increase knowledge about vegetable functions.

    Vegetable consumption is particularly low in childhood and is one of the main concerns about diet in this age range. Vegetable consumption is associated with better cardiovascular health and the prevention of other chronic non-communicable diseases. Therefore, it is important to find strategies to promote vegetable consumption at early ages, since eating habits established in childhood tend to persist into adulthood. The purpose of this study is to evaluate the impact of using a digital game on knowledge about vegetables and his consumption, in preschool children.
