| This chapter focuses on the production of structured lipids (SLs) by enzymatic processes, highlighting its functional/nutritional properties. Several aspects concerning lipases and phospholipases used as catalysts are exploited, namely, the regioselectivity, enzyme immobilization, and operational stability.
