O desperdício alimentar é um tema preocupante devido à grande quantidade de alimentos
desperdiçados diariamente em todo o mundo. Estima-se que um terço dos alimentos produzidos a
nível global seja perdido ou desperdiçado. Atualmente, o desperdício alimentar é um tema cada vez
mais abordado, estando normalmente associado a impactos negativos a vários níveis, tais como
económicos, sociais e ambientais. Neste sentido, a sensibilização do consumidor em geral, com vista
à adoção de práticas mais sustentáveis no dia a dia, torna-se um elemento-chave para mitigar a
problemática associada ao desperdício alimentar. Neste contexto, torna-se importante conhecer e
avaliar a rotina alimentar do consumidor, assim como o seu nível de consciencialização sobre o tema
do desperdício. Além disso, é essencial investigar as razões subjacentes à geração de resíduos, bem
como compreender o contexto físico e ambiental em que ocorre o consumo de alimentos. Ao
considerar esses aspetos, podemos desenvolver estratégias personalizadas e específicas para
minimizar o desperdício alimentar doméstico e promover uma gestão responsável dos alimentos.
O presente estudo teve como objetivo principal caracterizar o padrão de consumidor que
mais/menos causa desperdício alimentar doméstico no distrito de Leiria. Para alcançar este objetivo
foi aplicado um inquérito por questionário a 405 inquiridos residentes no distrito de Leiria com idade
superior a 18 anos, no período de fevereiro a maio de 2023. Os resultados obtidos indicaram que
79% (n=320) dos inquiridos têm atenção ao desperdício alimentar gerado a cada refeição e 36,8%
(n=149) afirma que nunca desperdiça alimentos. Adicionalmente, 27,7% (n=112) dos inquiridos
afirmam que o local onde geram mais desperdício alimentar é em suas casas. No que respeita ao
tipo de alimentos mais desperdiçados, são os “alimentos cozinhados” que ganham destaque (21%;
n=85).
Em simultâneo à aplicação do questionário, foi realizada uma atividade em diferentes tipologias de
famílias, cujo objetivo principal consistiu na contabilização em quilogramas (kg) dos resíduos
alimentares produzidos ao fim de uma semana. A comparação foi realizada entre famílias residentes
em contextos urbanos e rurais, permitindo assim a compreensão das dinâmicas específicas em
diferentes ambientes familiares e a identificação de possíveis variáveis que possam influenciar os
padrões de consumo alimentar. Os resultados revelaram que as famílias com animais e que dispõem
área exterior, apresentaram uma menor quantidade de desperdício. De uma forma geral, as famílias
em estudo, manifestaram interesse no tema, mostrando-se disponíveis em melhorar e adotar
práticas mais sustentáveis no seu dia-a-dia.
Food waste is a concerning issue due to the large amount of food wasted daily worldwide. It is estimated that one-third of the food produced globally is lost or wasted. Nowadays, food waste is a topic increasingly discussed, often associated with negative impacts on various levels such as economic, social, and environmental. In this sense, raising consumer awareness towards adopting more sustainable practices in daily life becomes a key element to mitigate the issues associated with food waste. In this context, it becomes important to understand and evaluate the consumer's food routine, as well as their level of awareness about the topic of waste. Besides, it is essential to investigate the underlying reasons for waste generation and understand the physical and environmental context in which food consumption occurs. By considering these aspects, we can develop personalized and specific strategies to minimize domestic food waste and promote responsible food management. The main objective of this study was to characterize the consumer pattern that causes more/less domestic food waste in the district of Leiria. To achieve this goal, a questionnaire survey was conducted with 405 respondents residing in the district of Leiria, aged over 18, from February to May 2023. The results showed that 79% (n=320) of the respondents pay attention to the food waste generated in each meal, and 36.8% (n=149) claim they never waste food. Additionally, 27.7% (n=112) of the respondents say that they generate more food waste at their homes. Regarding the type of food most wasted, "cooked food" stands out (21%; n=85). Simultaneously with the application of the questionnaire, an activity was carried out in different types of families, with the main objective being to account for the kilograms (kg) of food waste produced at the end of a week.
